ช่วงนี้อากาศเปลี่ยนแปลงบ่อย ๆ บางวันฝนก็ตกแบบไม่ลืมหูลืมตา บางวันก็แดดเปรี้ยง เฮ้อ! เอาแน่เอานอนไม่ได้เลยเนอะกับอากาศของบ้านเรา ยังไงก็รักษาร่างกายกันหน่อยแล้วกัน
วันนี้เรามีเมนูอาหารทำง่าย ๆ แถมอร่อยด้วยมาฝาก นั่นคือ ไข่ตุ๋นนมสด นอกจากเป็นเมนูที่ทำง่ายแล้ว วัตถุดิบที่ใช้ก็หาได้ง่าย**กด้วย
เครื่องปรุง
- ไข่ไก่ 3 ฟอง
- ซีอิ้วขาว 1 ช้อนโต๊ะ
- หอมแดงซอย 1-2 หัว (แล้วแต่ความชอบ)
- มะเขือเทศ 1 ผล (แล้วแต่ความชอบ)
- น้ำสะอาด 1 1/2 ช้อนโต๊ะ
- นมสด 3-4 ช้อนโต๊ะ
- ต้นหอมซอย
- น้ำปลา, พริกไทยป่น
เตรียมอุปกรณ์เรียบร้อยแล้ว เรามาเริ่มทำกันเลยดีกว่า...!!!
เริ่มจากการนำไข่ไก่มาตอกใส่ภาชนะทนความร้อน จากนั้นตีให้ไข่ขึ้นฟู แล้วช้อนเอาฟองที่อยู่ด้านหน้าออก เพราะเวลาตุ๋น เนื้อไข่จะได้เนียน ไม่เป็นผิวดาวอังคาร หลังจากนั้นก็ปรุงรสด้วยซีอิ๊วขาว น้ำปลา พริกไทยป่น ใส่หอมแดงซอยตามด้วยมะเขือเทศ น้ำสะอาด และสุดท้ายก็คือนมสด ตีเบา ๆ ให้ส่วนผสมเข้ากัน**กครั้ง ตบท้ายด้วยการโรยต้นหอมซอยด้านหน้าเล็กน้อย
หลังจากเตรียมเครื่องปรุงแล้ว เราก็นำลังถึงมาตั้งเตา ใส่น้ำพอประมาณ เมื่อน้ำเดือดจึงนำถ้วยไข่ตุ๋นวางลงไป ปิดฝาให้สนิท ใช้เวลาประมาณ 10-15 นาที เปิดลังถึงแล้วทดสอบดูว่าสุกหรือไม่โดยการใช้ไม้จิ้มฟันจิ้มลงไป ถ้าไม่มีเนื้อไข่เหลว ๆ ติดขึ้นมาแสดงว่าใช้ได้ ยกขึ้น แต่งหน้าด้วยต้นหอมซอย**กเล็กน้อย เสิร์ฟพร้อมข้าวสวยร้อน ๆ แค่นี้ก็อร่อยแล้ว
แต่ถ้าใครอยากที่จะใส่เนื้อสัตว์ลงไปก็แนะนำว่า ควรจะนำเนื้อสัตว์ไปรวนให้สุกเสียก่อนที่จะนำมาปรุงกับไข่ตุ๋น วันต่อไปจะเป็นเมนูอะไรนั้น ก็คงต้องติดตามกันใหม่ บ๊าย..บาย.

เนื้อไก่ 300 กรัม
กะทิ 1 กระป๋อง
เห็ด 6 ดอก
ข่า 8-9 แว่น
พริกสด 4-5 เม็ด
ใบมะกรูด 6-7 ใบ
ตะไคร้ 2 ต้น
ผักชี 2 ต้น
เกลือป่น 1 ช้อนชา
ซีอิ้วขาว (หรือน้ำปลา) 3 ช้อนโต๊ะ
น้ำตาลทราย 1 ช้อนโต๊ะ
น้ำมะนาว 3 ช้อนโต๊ะ
น้ำเปล่า 2 ถ้วย
วิธีทำ
1. นำข่า ตะไคร้ ใบมะกรูดมาล้างน้ำให้สะอาด สะเด็ดน้ำแล้วหั่นข่าเป็นแว่น หั่นตะไคร้เฉียงๆ และฉีกเส้นกลางใบมะกรูดออก พักไว้
2. นำเห็ด พริกสด และผักชีมาล้างน้ำให้สะอาด สะเด็ดน้ำแล้วหั่นเห็ดออกเป็น 6-8 ส่วน หั่นพริกเฉียงๆ แล้วซอยผักชีหยาบๆ พักไว้
3. นำเนื้อไก่มาล้างให้สะอาด สะเด็ดน้ำแล้วหั่นเป็นชิ้นขนาดพอคำ
4. เปิดเตาที่ไฟแรงปานกลาง นำหางกะทิและน้ำเปล่า 1 ถ้วยใส่ลงหม้อ รอจนเดือดจึงใส่ข่า ตะไคร้และใบมะกรูดลงไป เคี่ยวไปประมาณ 5 นาที
5. ใส่เนื้อไก่ลงไป รอจนเนื้อไก่เริ่มสุกจึงใส่เกลือป่นลงไป คนให้เข้ากัน
6. ใส่หัวกะทิลงไป คนให้เข้ากัน แล้วเติมน้ำเปล่าลงไป**ก 1 ถ้วย รอซักพักจนน้ำ**งเดือด
7. ใส่เห็ดและพริกที่หั่นไว้ลงไป คนให้เข้ากัน แล้วปิดเตาได้
8. ปรุงรสด้วยซีอิ้วขาว (หรือน้ำปลา) น้ำตาลทราย และน้ำมะนาว ชิมรสตามชอบ จากนั้น โรยด้วยผักชีและคนให้เข้ากัน
9. ตักต้มข่าไก่ใส่ชาม โรยหน้าด้วยผักชีเล็กน้อย จากนั้นก็ยกเสริฟได้เลยค่ะ
